Instead of using traditional fruits, they have opted for sweet potatoes to make a delicious and nutritious sweet potato jam. This innovative approach not only highlights the versatility of sweet potatoes but also offers a new twist on classic jam-making techniques. The production process begins with washing the sweet potatoes thoroughly. They are then sliced and ground together with water to form a smooth mixture. The mixture is heated to a temperature range of 71–82°C for about 20 minutes, allowing the flavors to develop and the texture to become more consistent. After that, the heat is gradually increased to 88°C, enabling the slurry to become more concentrated over time. Once the desired consistency is reached, the mixture is filtered to remove any impurities or residue. At this stage, fruit flavoring, cane sugar, or a natural sweetener can be added to enhance the taste. A small amount of water solution and pectin may also be incorporated to boost the nutritional value and improve the texture of the final product. The jam is then heated further to around 99–100°C, allowing it to thicken into a smooth paste. Once cooled, it can be packaged into cans or stored in bulk under cool conditions. This method ensures a long shelf life while preserving the rich flavor and nutritional benefits of the sweet potato. The resulting sweet potato jam is packed with essential nutrients, offering a delicate and balanced flavor profile. Its perfect level of sweetness and mellow texture make it ideal for spreading on bread, adding to yogurt, or even using as a topping for desserts. This unique jam not only provides a tasty alternative to traditional fruit jams but also showcases the potential of root vegetables in modern food production.
