Frying: Heat the vegetable oil in a pan to 160-180°C, fry the marinated meat in a pan for 2 to 3 minutes, and remove until amber. 6. Seasoning preparation: Add 35 g of Yuanfen, cinnamon and star anise, 25 g of dried tangerine peel, 15 g of pepper, 10 g of pepper, 2 kg of fresh ginger, 3 kg of onion, boiled in clean water for 2 to 3 hours and then filtered. Then add lard 7kg, soy sauce 3 ~ 4kg, salt 2 ~ 3kg, rice wine 1kg, monosodium glutamate 25g, pepper 15g, sesame oil 50g, and finally add water to 100kg, filter after boiling, keep warm to 70 °C reserve. 7. Bottling: 500 g glass bottles, each containing 280 g meat and 220 g soup. The white head of snail meat should be layered toward the bottle wall and then poured into the soup. 8. Exhaust seal: Exhaust temperature should be controlled at 80 °C, time 30 minutes, immediately after the exhaust heat seal. 9. Sterilization and cooling: Sterilize for 30 minutes at 121°C, cool to 30°C, remove and store the product, heat for 5 to 7 days, and package it for sale after inspection.
